Favorite Dish

I like experimenting with many different recipes but anything with pasta is my favorite. I love to sauté gold, red, green bell peppers with and onion, some zucchini, broccoli slaw, and garlic in a little olive oil. Then I add a healthy sauce from a jar, usually one with sundried tomatoes or spinach. When hot, pour over favorite pasta, preferably whole-wheat spaghetti or spinach fettuccini. I don't measure, just sample it and add lots of fresh herbs from my mom's garden (oregano, purple basil, Italian parsley). And my secret is to add lots of crushed red pepper to make it spicy! Serve up with a fresh salad of mixed greens, corn on the cob and whole wheat rolls. You can't go wrong!

Favorite vegetable

Broccoli, because it's good anyway and on everything. It's tasty raw, steamed, stir fried, on pizza in salad or by itself with salt & pepper.

How did you become a Vegetarian?

I began following principles regarding properly combined meals about three years ago. I was eating less & less meat until one day I wasn't eating any at all. The best bonus for me is that I was overweight when I began, now I'm 50 lbs lighter & content not eating meat.
