Southwestern Pasta Sauce

1 Tablespoon Extra virgin olive oil  
½ Cup Red onion Diced
4 Cloves Garlic Minced
1   Jalapeno pepper Seeded/minced
1 Tablespoon Chili powder  
¼ Teaspoon Thyme  
¼ Teaspoon Oregano  
¼ Teaspoon Freshly ground pepper  
¼ Teaspoon Tabasco  
2 Tablespoons Fresh Cilantro Chopped
½ Cup Tequila  
1.5 Ounce Veggie-Glace Gold (or 1 Tbs. vegetable stock paste) Gourmet Items Shopping
2 Cups Tomatoes, peeled, seeded, and diced  
6   Sun-dried tomatoes Coarsely chopped
1 Tablespoon Tomato paste  
1 Cup Water  
1 Cup White corn (fresh, canned or frozen)  
1 Pound Penne pasta (cooked separately in salted boiling water)  

  Sauté onion in olive oil 4 minutes. Add garlic, jalapeno, chili powder, thyme, oregano, black pepper, Tabasco, and 1 Tablespoon cilantro, stir. Add Tequila and reduce by ½, then add Veggie-Glace Gold, tomatoes sun-dried tomatoes and tomato paste. Stir until Veggie-Glace Gold is completely dissolved. Add water and corn, and return to a simmer and heat through. Toss with hot pasta and garnish with remaining cilantro.
