RED CABBAGE SLAW

Servings: 4

Preparation Time: 30 Minutes.

Ingredients:

1/4 large head, red cabbage, finely shredded
1 cup packed carrots, grated
1/4 cup packed fresh beets, grated
1/4 cup jicama, cut into thin match sticks
1 large green apple, grated
1/4 cup currants
1 1/2 tablespoons lime juice
1 1/2 tablespoons apple cider vinegar
Pinch dry mustard, or to taste
1/2 cup orange juice
1/4 teaspoon celery seeds
1 1/2 tablespoons thawed apple juice concentrate
1/4 teaspoon pepper
2 tablespoons parsley, minced

In a large salad, combine all ingredients except parsley; toss to combine. Let stand at room temperature while preparing rest of meal, then add parsley and toss again before serving. Makes for generous servings.
