Sunset Citrus Salad
| 1 | Orange | Zested | |
| 1/4 | Cup | Juice from zested orange | |
| 2 | Tablespoons | Brown sugar | |
| 1/2 | Teaspoon | Cinnamon | |
| Pinch | Nutmeg | ||
| 1 | Medium | Jicama | Peeled & julienne |
| 1 | Large | Ruby grapefruit | Peeled & sectioned |
| 2 | Medium | Valencia oranges | Peeled & cut into rounds |
| 2 | Kiwi fruit | Peeled and sliced into rounds |
1. In salad bowl whisk together zest and juice from orange with cinnamon, nutmeg and brown sugar. Add jicama, grapefruit sections, orange and kiwi rounds, toss gently to coat ingredients. Serves four.
*zest- is the perfumy outermost skin layer of citrus, which is removed with a citrus zester, paring knife or vegetable peeler. Only the colored portion of the skin, not the white pith, is considered the zest.Please send any questions, comments, pointers, mistakes, or omissions
