Pineapple Nut Bread

1 1/2 cups

Unbleached all purpose flour

1 cup

Bran

1 Tablespoon

Baking powder

1 teaspoon

Baking soda

1 teaspoon

Salt

1/2 cup

Roasted peanuts chopped

2

Eggs, lightly beaten or egg replacer

8 ounces

Crushed pineapple and its juice

 

1. Add wet ingredients to dry and stir thoroughly.

2. Bake at 350 degrees in a greased loaf pan for 35-40 minutes. Test with a toothpick for doneness. (When toothpick is dry, bread is done.)
