Pineapple Nut Bread

1 1/2 cups |
Unbleached all purpose flour |

1 cup |
Bran |
|
1 Tablespoon |
Baking powder |
|
1 teaspoon |
Baking soda |
|
1 teaspoon |
Salt |
|
1/2 cup |
Roasted peanuts chopped |
|
2 |
Eggs, lightly beaten or egg replacer |
|
8 ounces |
Crushed pineapple and its juice |
1. Add wet ingredients to dry and stir thoroughly.
2. Bake at 350 degrees in a greased loaf pan for 35-40 minutes. Test with a toothpick for doneness.
