Banana, Raisin, and Oatmeal Jumbles:

3 large bananas, mashed

2 cups rolled oats

1 cup raisins

1/3 cup olive oil

dash of sea salt

1 tsp vanilla extract

1/2 cup chopped walnuts or pecans (optional)

cinnamon

 

1. Preheat oven to 350'F. Combine bananas, oats, raisins, oil, salt, vanilla, and nuts. Allow to rest for 15 minutes to let the flavors mingle.

2. Drop by teaspoonfuls onto an un-greased baking sheet and dust with cinnamon. Bake for 20 minutes or until brown. (best if eaten while hot out of the oven)

Yields 24 jumbles

 

Prep time about 5 minutes, total time in the kitchen about 45 minutes
