They start with the white Trebbiano grape,crushed and simmered in copper kettles.  Aged in a series of wooden casks, oak, chestnut, acacia, ash, cherry, juniper, mulberry, like great wines Balsamic vinegar gains complexity with every year aged. 

For everyday uses the Balsamic Seasoning is great aged 12 years, in the Balsamic Style. It works well in salad dressings and marinades. 

For the Culinary Connoisseur the Gold Seal Traditional Balsamic Vinegar  is the Italian Consortium's highest rating.  It takes just a few drops of this sweet syrup to transform a plate of fresh strawberries or  accent a simple tomato sauce. The Gold Seal is a blend of vinegars aged 50-100 years from the region of Emilia.
